We like this mushroom sauce on our steak. 1 Shallot chopped finely 3 cloves of garlic chopped finely 250g button mushrooms 1/2 c salt reduced chicken stock 1 t red or white wine vinegar 1/2 c cream 1 t wholegrain mustard 1 t chopped fresh rosemary or thyme salt and freshly cracked black pepper 1/2 c chopped bacon
Heat 1 t of oil over a medium heat, add the bacon and fry until crispy. Drain the excess fat from the pan, reduce the heat to medium low and add the shallot and garlic. cook for a few minutes until soft. Add the mushrooms and cook for about 5 minutes. Add the chicken stock and vinegar, then let everything simmer away to reduce by half. Add the cream, mustard and rosemary or thyme. simmer for another 5 minutes or until the sauce is thick enough to coat the back of a spoon and is a nice consistency for pouring onto a steak. Taste and season with salt and a crack of pepper.
